I wanted to wish everyone a Happy Thanksgiving! Hard to believe that this is the first time I’ll be having Thanksgiving on American soil since 2000. I was a junior in high school that year and just got my learners permit. That makes me feel really old now. I’m easing myself back into the tradition this year. I’m going to my sisters house in New Hampshire. We’re getting up a dawn and driving over there from Connecticut on Thursday morning. I’m keeping my fingers crossed it doesn’t snow too hard.

Pumpkin Mocha Cake
I just barely managed to survive my first week back at work. Even though I’m doing the same job as I was in London I wanted to make a good impression with my new office mates in Connecticut. Last Monday I got up nice and early and had Alex drop me off at the train station. I had studied the train schedule the day before and bought my ticket in advance. So I get on the train at the right time and it’s only 2 stops and about 15 minutes to Stamford. After about 20 minutes has elapsed I start to panic! We haven’t made any stops! I whip out my phone and check Google Maps. The little blue dot shows that we’re all the way to Greenwich, which is already way past my stop. I ask the guy standing next to me where is the train going and he said, “oh this is the express to Grand Central”.

You know it’s the beginning of the new year when the never ending perfume ads stop, the Weight Watchers ads start and my Google reader is full of kale and lentils (yuck).  Instead of getting sucked up into dieting I try to maintain the same eating habits all year.

Chocolate Waffles with Speculoos Cream

I made these chocolate waffles when I was going through my speculoos phase. I’m not really over it yet. I’ve been using it instead of peanut butter in a lot of recipes lately. It’s just so good! I like to eat it with a spoon straight from the jar. The smooth, spicy creaminess of the speculoos goes very well with the chocolate waffles.
