Thumbprint cookies remind me of my grandma. She used to buy us really brightly colored ones from Giant Eagle every time we came to visit. I was thinking about her the other day and decided I needed to make a homemade version.

These cookies are very simple to make yet look very elegant. I think these would be a beautiful cookie to give as a gift to any Valentine.

Valentine’s Day Thumbprint Cookies

Yield: 32 cookies

Valentine’s Day Thumbprint Cookies

Ingredients

Ingredients

3 sticks (336g) unsalted butter, at room temperature

1 cup sugar

1 tsp vanilla

3 1/2 cups plain flour

1/4 tsp salt

1 egg beaten with 1 tbs water (for coating sprinkles)

1 bottle sprinkles

Vanilla Buttercream (I flavored mine with LorAnn Marshmallow. You won't need all of it but refrigerate or freeze the rest)

Instructions

  1. In an electric mixer cream together the butter and sugar until just combined. Add the vanilla.
  2. In a separate bowl sift together the flour and salt.
  3. With the mixer on low add the flour to the butter mixture. Mix until a dough forms.
  4. Roll out a piece of cling film and dump the dough on top. Roll it together and pat down to form a disc. Wrap up and refrigerate for 30 minutes.
  5. Pre-heat the oven to 350 F/180 C and line a baking sheet with parchment paper (I didn't and they stuck a little bit).
  6. Place the beaten egg in a bowl and pour the sprinkles into another bowl. Roll round balls that weigh 1 ounce (28g).
  7. Roll the balls in the egg wash and then in the sprinkles and place on the baking sheet.
  8. Make a light indentation in the middle with your finger. Bake for 20-25 minutes until the cookie turns lightly golden.
  9. Place on a cooling rack and cool completely before piping a small swirl (using a star tip) into the indentation of each cookie. Store in an airtight container.

    Where is your lovely baking tray with the concentric circles from?

    • The metallica baking tray is made by Circulon and I got 2 from John Lewis. They are a weird square size but they are fab non stick and I almost never have to put parchment on them.

        Have you tried freezing these before? We’re looking for good cookies to make for a wedding reception, but need to be able to freeze them for 1-2 weeks.

        • I haven’t but I think you could make and bake the cookie part and freeze it. Layer them in between sheets of parchment so they don’t stick together. I would make and freeze the frosting separate and then pipe it in the indent one or two days in advance and keep them in some airtight tupperware until they’re needed.

          • I am doing these for Valentines but I need to know if the frosting will become soft or hard and what type of frosting you used. I will put this in plastic bags so I need my frosting to remain hard. If you have advices it would be grab! Thanks :)

          • Hi, the frosting does not go hard. It’s the same icing as the ones I use for cupcakes. The link is in the recipe.
