Crunchy Stuffed French Toast

You know it’s the beginning of the new year when the never ending perfume ads stop, the Weight Watchers ads start and my Google reader is full of kale and lentils (yuck).  Instead of getting sucked up into dieting I try to maintain the same eating habits all year.

Crunchy Stuffed French Toast

None of that boring stuff over here! To celebrate the new year I made this crunchy french toast for breakfast. The outside is coated in crushed corn flakes and the middle is stuffed with speculoos spread and sliced bananas. If you are doing the diet thing there’s fruit in here! This french toast is pretty rich. I could only manage one sandwich.

Crunchy Stuffed French Toast

4 sandwiches

Crunchy Stuffed French Toast


1 cup single cream

2 eggs

1 tsp sugar

1/2 tsp vanilla

1/4 tsp salt

2 cups cornflakes, crushed

1/2 cup speculoos sread

8 slices white bread

2 bananas, sliced

icing sugar, for dusting


  1. In a medium bowl whisk together the cream, eggs, sugar, vanilla and salt. Place the crushed corn flakes on a plate.
  2. Spread a thin layer of speculoos spread on each slice of bread and place banana slices on 4 of the slices. Sandwich together with the other slices so there are 4 sandwiches.
  3. Place a frying pan over medium high heat and spritz with cooking spray.. Dip each sandwich in the cream mixture and then both sides in the corn flakes. Place in the frying pan and toast on each side for 2-3 minutes.
  4. Sprinkle with icing sugar and serve


The speculoos spread can be replaces with peanut butter or nutella.
