This is the first recipe I made from Leon Baking & Puddings. You can read my review of the book here. It’s a simple chocolate mousse but I jazzed it up by adding shards of homemade honeycomb. What’s great about this recipe is that’s it’s also easily adapted to be dairy free.

I’d like to thank every one that read Semi Sweet for the first Cupcake Book Club. I realize it’s a big task to both bake and read a book with everyone’s busy schedules. I had a few people say they read the book which is fantastic. I also got a few inspired creations. I love seeing everyone’s opinions of the book and what about the book inspired them. May 20th is World Baking Day (sponsored by Stork) to celebrate all cooks. Baking is pretty popular these days and for those that don’t know where to get started I picked an easy and impressive looking cake to maybe give you some inspiration. I usually only bake with butter but since 2008 times are tough. I myself worked for a massive company that declared bankruptcy. You’d have to be hiding under a rock to recognize that the price of food has gone up. A block of butter really is a luxury at £1.21 for 250g whereas a block of Stork margarine only costs around 78p.
Leon Baking & Puddings is the third book in the Leon series. The book follows the principle of the Leon restaurants that “what tastes good can also do you good”. The book is a massive baking bible that clocks in at over 300 pages. The book so co written by Clare Ptak owner of Violet bakery in London.

The first thing I do in the morning is make a cup of tea. Alex isn’t even allowed to talk to me until I have my mug of tea in one hand and bowl of Rice Krispies in the other hand. I also get a bit grumpy when Eamon has the day off on Sky News and I have to watch Mark Longhurst. I like Stephen Dixon though. He’s nice to look at first thing in the morning.
