Starlight Cupcakes


My friend Marcus ran the London Marathon For Starlight Childrens Foundation on Sunday and I offered to make cupcakes for the afterparty. He finished the marathon in an amazing 4 hours and 50 minutes! I was beat after just taking the boxes from Canary Wharf to Victoria!

I felt like making pie the other day and my sister suggested that I make one with a lattice crust. I’d never made one before and I thought it would be difficult but it was a lot easier than I thought.

The end result came out tasting like a pie should but aesthetically speaking it could have been better, but for a first attempt I was happy. I’m going to try again soon and I know where I made mistakes the first time.

I go to Selfridge’s Food Hall fairly often to drool over everything. On the occasion I actually buy something I usually get a Lola’s cupcake. Recently, the food hall has been changed around (for the better I think). Where the baked goods used to be together in one case it is now 2 separate areas. One area is a Lola’s cupcake bar with a few small tables. It looks very cute.

Poole & Bournemouth

I went to Poole and Bournemouth this weekend to visit the in laws so I didn’t have time to bake anything so I found a few fun things while I was down there to write about instead.
It was a beautiful weekend. I guess it’s also this strange weather that’s keeping the volcano ash cloud over Europe. As usual when we got there we took a walk to Poole Quay (the second largest natural harbour in the world after Sydney) and on the way is the Dolphin Mall. The mall itself is not exciting at all. It’s an ugly 1970’s block of concrete.

I’ve been going around and finding whoopie pies at bakeries in London and rating them so I decided that I should make my own and see how I did before I started critiquing the efforts of others. I decided to make a classic whoopie pie (chocolate cake and a light almost marshmallow filling).
I was pretty pleased with the end result! The cake was light and moist and the filling is different to what’s usually on a cupcake. It’s light but not gooey and I think it has the flavor of ice cream almost. I adapted this recipe from the NY Times. It took me awhile to find a recipe that didn’t use Marshmallow Fluff or Corn Syrup (both which you don’t get on a regular basis in the UK). I was also really pleased I found a cake recipe that didn’t have vegetable shortening. I don’t particularly like the way it tastes.
