Vegan Parfait

I was trying to think of a few lower calorie desserts that Alex could have while he’s on a temporary diet. I thought a fruit parfait would be a fun dessert. It’s fun, easy and most of all tastes very good. There is still some sugar in here so I made him a tiny cup to have after dinner and he was very pleased.

Mix it up and use whatever fruit you happen to have at home. I used one sliced banana and topped it off with some Dorset chocolate granola which was on special offer at the supermarket. I think time I’m going to try summer berries with and a pie topping.

I finally managed to master the vegan whipped cream. It takes patience which I don’t often have. Instead of coconut milk I bought a small can of coconut cream. I even messed up the method but turning the can upside down after I took it out of the fridge and it was still a lot easier to drain than the coconut milk. I have also successfully made it using UHT coconut cream (just check that you’re buying a box or can that’s squishy not the coconut cream that you have to add hot water too). I prefer this method as I’m using pretty much everything in the can or box and not throwing away excess coconut water.

You can find the recipe for the coconut whipped cream with the Chocolate Cream Pie I made a few weeks ago (note that the photos of the pie are what happened after a first failed attempt). Alex’s opinion was that it didn’t need much additional sugar and I was impressed that the firmness improved after a few hours in the fridge.
