These are a great dessert for a Thanksgiving party. Small and perfect for sharing. I can just imagine everyone sitting on the couch watching Thanksgiving specials on TV after dinner with their belts undone a notch with these shooters balancing on their stuffed bellies!
The serving size is also perfect since the mousse is very rich. Sprinkle crushed graham crackers or ginger cookies on the bottom for added texture. After I made these I thought using pumpkin cake for alternate layers would make for a great pumpkin parfait.
I poured some of the mousse into tea cups but it was just too much to eat in one sitting for one person! I think that has to be the first time that I said something was too rich for me. I made half of this recipe and it would have filled about 3 tea cups and plenty of shot glasses.
1 can pumpkin puree
3 cups heavy cream (I used double cream)
3/4 cup caster sugar
1/2 tsp pumpkin pie spice
1 tbs vanilla
graham crackers or ginger snaps for garnish
- In a saucepan stir together the pumpkin, 1 cup of the cream, sugar and spice. Simmer for 5 minutes. Set aside until cool.
- Whip the remaining 2 cups cream and vanilla to soft peaks. Fold into the pumpkin mixture.
- Spoon into cups or shooters with the crumbled cookies on the bottom or the top.
