It almost felt like Spring this weekend! Unfortunately, I was still stuck inside while this stubborn cold goes away. I’m so bummed that I missed out on the chance to finally get out of the house for a bit. It seems like the winter and sub zero temperatures will never end.
This recipe from Bakeless Sweets is fantastically easy. It doesn’t even require fresh peaches so it’s great to make on a depressingly cold day. It took me about 5 minutes to whip up this mixture. I even cheated and melted the gelatin in the microwave.
Even with the canned peaches the mousse tastes refreshingly fruity and light. This is a perfect dessert to make for a dinner party. You can spend time with your guests instead of in the kitchen. Easily made in advance and cheap to make.
This also gave me a chance to whip up a dessert using my Vitamix! What can’t a Vitamix do? I made 4 generous servings in ramekins but it could stretch to six in smaller dishes.
2 cans of peaches in juice (15 oz cans)
Juice of 1/2 a lemon
3 tsp powdered gelatin
1/2 cup heavy cream
1/4 tsp salt
- Drain the peaches and save 1/2 cup of the juice. Place the reserved juice, lemon juice and gelatin in a small saucepan. Set aside for 5 minutes.
- Blend the peaches, salt and cream in a blender until smooth.
- Warm the peach juice mixture over a medium heat until the gelatin dissolves. Pour into the blender with the peaches and blend for one minute more.
- Pour into ramekins and refrigerate for 2 hours until set.
