I wasn’t sure what to call this pudding. I love pudding but it’s not real pudding it’s “fake” pudding. The two main ingredients are avocados and bananas. Both of which I love.
I’m just not sure how I feel about healthy ingredients masquerading as dessert. I usually make them for Alex since they’re almost always dairy free. This pudding isn’t bad. I would even call it good. Avocado has a great creamy texture and the pudding has an overall nice tartness. It’s still not full fat chocolate pudding though 😉
The recipe is from The Blender Girl cookbook. It’s an interesting book. Overall, I’m a huge smoothie and juice lover but I’m not really into protein powders, dates or raw nuts. Most of the recipes look really good but taking a look at the ingredient list pretty much none of it I keep in my pantry.
However, I would definitely give a few more of the recipes a try. There are some strange ingredients but the steps are relatively simple. My Vitamix is really powerful and can make some awesome things. There is great advice in the book about blenders and other healthy tips.
1/4 cup honey
1/4 cup fresh lime juice
1/4 cup fresh lemon juice
zest of 1 lemon
- Place all of the ingredients in a blender and pulse until smooth. Pour into 2 small mason jars and seal.
- Refrigerate for 3 hours until firm.
