This recipe for homemade chocolate pudding totally blows the store bought stuff out of the water. It’s just so good, creamy and comforting. It has a nice deep chocolate flavor too. I ate this entire batch of pudding by myself. I ate the entire mug above in the photo in one sitting. I just couldn’t stop myself.
I’ve been hooked on pudding the last few months. I made salted caramel pudding, banana pudding, coconut pudding and recently went to an all pudding bakery in NYC. I’ve only recently started making my own pudding from scratch but I’ve been filling my cupcakes with pudding for years.
I’m definitely not a pudding expert yet but I am getting better at telling when the pudding is done. It’s almost like making jam. You have to know just the right time to take it off the stove so it will set. This batch I did make a little mistake and take it off to soon but the next morning I poured it back into a saucepan and whisked it a little more and it was fine!
5 cups whole milk
1 cup heavy cream
3 egg yolks
1 1/3 cups sugar
1/4 cup cocoa powder
1/8 tsp salt
10 ounces bittersweet (70%) chocolate, chopped
- In a medium sized saucepan whisk together the milk, cream, yolks, sugar, cocoa powder, cornstarch and salt. Place over medium high heat and whisk constantly for 3-4 minutes.
- Add in the chocolate and whisk continuously until the mixture starts to get thick, about 14-15 minutes. It will be a little loose but will thicken as it chills.
- Strain the mixture through a fine mesh sieve into a medium sized bowl. Cover with plastic wrap directly on the surface of the pudding. Leave for 10 minutes and then refrigerate for 2 hours.
