I mentioned that I recently changed jobs. My last week not only did I make my co-workers cupcakes, I also made them some of this amazing birthday cake popcorn. For some reason I went with a birthday theme for my leaving cakes. I think they were all sad to see me go. At least that’s what they said :-p
The recipe is adapted from 101 Things to do with Popcorn, read my review here. My co-workers had only ever had sweet or salty popcorn before. So this popcorn was a bit of a revelation for them! I’m not crazy about the popcorn they serve at the movies in the UK. They don’t pop it fresh in the theater!
It’s a good thing that we like to watch movies at home. The snack choice at Chez American Cupcake is way better!
Ingredients

8 cups popped popcorn
1/2 cup corn syrup
2 tbs white cake mix
1 tbs sugar
1/4 tsp baking soda
1/2 cup Rainbow Sprinkles
Mini M&M's (about 1-2 handfuls)
Instructions
- In a small saucepan combine the corn syrup, cake mix, sugar and baking soda. Melt over medium heat until the sugar dissolves and thins out.
- Pour the popped popcorn into a large bowl and pour the syrup over top. Stir to coat (quickly) and then pour and stir in the M&M's and sprinkles.
- Pour the mixture over a baking tray lined with parchment paper to dry. Best when eaten fresh but can be stored in an airtight container for 1-2 days.
