I made this for breakfast this morning about 10 minutes ago and Alex and I both loved it! Oatmeal can be pretty dull and tastes like wall paper paste to me. The chocolate chip topping really jazzes it up though! Coconut and sliced almonds (or pecans if you open up your bag of almonds to find they’ve gone rancid) are stirred in for extra flavor.
Don’t forget the fancy drop of coconut and nut on top for garnish! We really enjoyed making oatmeal with almond milk for the first time. It gave the oatmeal a little extra flavor and richness that our usual soy milk lacks. This oatmeal is a nice weekend treat! Recipe can be found at Cookin Cowgirl.
