I made these cute funfetti muffins on the last day of Christmas vacation before I had to go back to work. I had such a nice relaxing break that it was terrible getting up the next day when it was too dark. We didn’t do anything super special for our first Christmas back in America. It’s just too cold to go out!
I much prefer to stay at home and hang out in my craft room. I have a portable electric heater that I keep in there that makes it feel nice and warm.
I would suggest that in addition to adding sprinkles to the batter to add something else otherwise the muffins will taste too plain. I added white chocolate chips to give added flavor and texture.
It makes me happy just to look at them. It looks like birthday cake but it’s actually a muffin.
I thought they tasted best fresh on the morning they were made. I made two batches one with sprinkles and white chocolate for me and another batch with chocolate chips, maple syrup and hazelnuts for Alex.
1 cup AP flour
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
2 tbs sugar
2/3 cup buttermilk
2 tbs unsalted butter, melted
1 tsp vanilla
1/3 cup rainbow sprinkles
1/3 cup white chocolate chips
- Preheat the oven to 350 F and spray a muffin tin with cooking spray. In a large bowl mix together the flour, baking powder, baking soda, salt and sugar.
- In a separate bowl mix together the buttermilk, melted butter, egg and vanilla.
- Mix the wet ingredients into the dry. Stir in the sprinkles and chocolate chips. Place two scoops of batter in each muffin hole and bake for 18-20 minutes.
- Leave to cool for 5 minutes. Remove from the tin.
