I woke up on Sunday morning and it was very gray and drizzly. It’s the first weekend in weeks that it’s been stay inside weather. Perfect morning for fresh blueberry muffins and coffee!
Such a classic breakfast item I can’t believe that I’m only making them now. I’ve only posted a few muffin recipes and they’ve leaned towards chocolate and banana flavors.
We move to Nashville in just under one month now! I’m trying to finish off the random bags of flour and sugar that I have creeping in the back of the pantry. I can’t wait to move into our new house. It has the nicest kitchen of any place we’ve ever lived. It has a big over sized island in the center. I will also have a gas stove for the first time!
These muffins were perfect. Soft, with just enough fruit and a sweet streusel topping.
The recipe is from Eating Richly. I added only 1/2 cup of sugar and I needed to add extra milk at the end as the batter was too thick.
