I made a few healthy breakfasts last week and since this is a dessert blog I need to balance out all that healthy stuff with something even more fun.

Banana Rolo Muffins

I made these for a special weekend breakfast but they were very sweet and indulgent. I wouldn’t eat them every morning for breakfast but that first bite when fresh from the oven was just heaven.

Banana Rolo Muffins

I used this banana bread recipe and instead of a loaf made muffins and threw in a bag of whole Rolos. You could chop the Rolos in half but I decided to keep them whole for extra chocolate caramel ooziness.

Banana Rolo Muffins


1/2 cup butter, at room temperature

1 cup brown sugar

2 eggs

1 tbs vanilla

4 ripe bananas, mashed

2 cups plain flour

3 tsp baking powder

1/2 tsp salt

1 cup Rolos


  1. Preheat oven to 350 F/180 C. Line a muffin tray with paper liners.In a large bowl cream the butter and sugar together until light and creamy. Add the eggs one at a time, beating after each addition. Stir in the vanilla and the mashed banana.
  2. In a small bowl whisk together the flour, salt and baking powder. Slowly stir the flour mixture into the banana mixture. Stir in the Rolos. Pour the batter into the prepared liners and bake for 20-25 minutes.
