Victoria Sponge Cupcakes

After nine years of living in the UK I’m happy to report that I’m now a British citizen! I’m a proud dual American and British citizen now I suppose!

Victoria Sponge Cupcakes

I made a classic Victoria Sponge in cupcake form to celebrate! This is some of the best buttercream I’ve ever made and I was being really bad and chucking in all the leftover butter and icing sugar I had into the bowl. So I have no idea what ratio of butter to sugar I actually used.

I did use a little bit of whole milk, which I don’t usually buy since I use soy milk a lot and it made a big difference. Made the frosting really nice and creamy.

 

Victoria Sponge Cupcakes

Whip up your favorite batch of vanilla cupcakes and frosting. I used this recipe. Not my favorite vanilla cupcake recipe to date but still tasty.

Cut out the center of the cake, fill with raspberry jam and top with a swirl of vanilla buttercream. Buttercream on a Victoria Sponge isn’t traditional but it is seen on more modern versions.
