Neapolitan Cupcakes

I wanted to make a Neapolitan cake for forever but making three different kinds of cake seemed like a big task for one afternoon.

I opted to make cupcakes with vanilla and strawberry cake topped with chocolate frosting. I used these nifty batter babies that I bought in New Hampshire. I also got the chocolate lip mold there.

To make the recipe as easy as possible I made my favorite vanilla cake from Love Bakery (one third of this recipe for just under 12 cupcakes). I split the batter into two bowls and stirred two tablespoons of strawberry jam and some pink gel color into one half. Top with chocolate frosting (one half of this recipe).

 

Neapolitan Cupcakes

To make the cupcakes extra fluffy make sure you cream the butter and sugar together on medium high speed for seven full minutes. It will turn almost white in color.
