It’s been awhile since I made any cupcakes. I tend to save them for special occasions where I can bring them to share . A few weeks ago I decided to move jobs. As a goodbye to all my old colleagues I made them one last batch of cupcakes.
They must all be super skinny now that I’ve left. When I used to bring in cupcakes they would take about 2 days to be eaten. The last batch I brought in didn’t even last a full day. I guess people don’t appreciate these things until they’re gone!
To me classic birthday cupcakes are yellow cake and chocolate frosting. This frosting was out of this world amazing. Super fudgy and perfectly rich. It’s not super stiff but don’t be tempted to add extra icing sugar. It will make the frosting too sweet.
