Chocolate Pumpkin Spice Cupcakes

I made some last minute Thanksgiving themed cupcakes. I was sent the new book 10,000 Cupcakes by Susannah Tee so I decided to give the chocolate cupcakes a whirl.
The book itself is very cute and set into three sections so you can mix and match decorations, frosting and cake flavor.
I already own another of Susannah’s book so I did have some high expectations for this book. I made the pumpkin cupcakes first but they came out all wrong and went into the bin. In case I made a mistake I went ahead and made the chocolate cupcakes.
The recipe turned out much better but I wasn’t very impressed. The recipe only called for 2 tablespoons of chocolate and no vanilla. I though they were rather anemic for chocolate cupcakes and I even doubled the amount of cocoa powder called for.
The book is aimed for a younger audience but lacks the substance to be a teaching manual. I’d consider the book for stocking stuffer but not a serious baking book.
I stuffed the cupcakes with pumpkin spice pudding and added some pumpkin pie spice to some leftover vanilla buttercream! Delicious idea I think!
Whip up the pudding according to the directions on the pack and when it’s ready and the cupcakes are cooled cut a cone into the middle and spoon in one teaspoon of pudding. Use your favorite chocolate cupcake recipe (try this one or this one).
