Cherry Chip Cupcaakes

These are some of my favorite cupcakes ever. To start with the cake is fantastic and fluffy. It also reminds me of the boxed cherry chip cake mixes but it’s homemade so tastes a hundred times better!

Cherry Chip Cupcaakes

I used cocktail cherries, almond extract and a little bit of the juice in the cake to give it a nice cherry and almond flavor. in my Swiss Meringue I added a subtle amount of cherry extract and almond extract. Vanilla could also be used.

Cherry Chip Cupcaakes

I used this layer cake recipe from Sprinkle Bakes. I baked the cupcakes for 20-25 minutes and only used a tiny drop of pink food coloring in the frosting. It will make about 12 cupcakes.

The delicate and soft nature of the cupcakes make them perfect for a birthday or baby shower.
