Blueberry Pie Cupcakes

I was sent some cupcake wrappers from Bella Couture and asked to style a red, white and blue table to match. My wrappers are predominately red with blue stars. I decided to make a red and white themed table and use blueberries for the blue accent. When I thought of 4th of July I thought of blueberry pie. I made blueberry pie cupcakes served with blueberry lemonade. I made a graham cracker cupcake with an almond and vanilla whipped buttercream. I topped the cupcakes with sugared blueberries and a crunchy streusel topping.

My table set up itself was very simple. I didn’t buy anything new. I used some white lined as the backdrop with some red and beige napkins. I used my favorite mini cake stand. I didn’t realize until I uploaded the photos that I forgot my mini American flags. So mad at myself.

Yield: 12 cupcakes

Blueberry Pie Cupcakes

Ingredients

Cupcakes

1 1/2 cups graham cracker crumbs (15 cookies crushed)

1/2 cup AP flour

2 1/2 tsp baking powder

1 stick (112g) unsalted butter, at room temperature

3/4 cups sugar

2 eggs

1 tsp vanilla

3/4 cup milk

Blueberry Jam (for the center) I like Bonne Mamam

Frosting

2 sticks (224g) unsalted butter, at room temperature

2 cups powdered sugar, sifted

1/4 tsp almond extract

1 tsp vanilla

Sugared Blueberries

1 egg white

1/2 cup sugar

1 cup fresh blueberries

Instructions

  1. Preheat the oven to 350 F/180 C and line a muffin tray with paper liners. In a small bowl whisk together the graham cracker crumbs, flour and baking powder.
  2. In the large bowl of an electric mixer beat together the butter and sugar for 5 minutes until white and creamy. Add in the eggs one at a time and beat until combined. Add in the vanilla. Add in graham cracker mixture and milk in three additions beating after each, starting and ending with the graham crackers.
  3. Fill each case 3/4 full and bake for 22 minutes. Place on a wire rack to cool. Once cool cut out the center in a cone shape and add a teaspoon of the jam in each.
  4. Make the frosting. Beat the butter, powdered sugar and extracts together for 5-10 minutes on medium speed until thoroughly fluffy and whipped. Add in 1-2 teaspoons of milk if necessary.
  5. For the blueberries add the egg white in one bowl and the sugar in another. Use a toothpick to spear one blueberry. Dip in the egg white and then sprinkle with the sugar. Place on a piece of greaseproof paper and leave for 30 minutes to dry.
  6. Decorate each cupcake with a swirl of buttercream, some streusel topping and a sugared blueberry.
