XXX Chocolate Cookies

Christmas has snuck up on me really fast this year! I didn’t get nearly as much baking done as I wanted to. I found it hard to stand on my feet for more than a few hours at a time. I don’t want to end up with pregnancy cankles :-p

XXX Chocolate Cookies

My neighbor across the street invited me over for a cookie party last week. I was really excited so I poured over all my cookie books to find something that would impress them. I settled on these triple chocolate cookies from Outsider Tart.

They turned out so well that Alex didn’t want me to take them! I made some backup thumbprint cookies to take over instead and of course they didn’t come out as perfect as I wanted but they were still adorable and delicious. I also made some gingerdoodles but they were only average. In terms of blog posts I didn’t end up with many Christmas recipes to share :(

These cookies are amazing. They’re more of a crinkle cookie (like these but better). There isn’t much flour involved so they’re very chocolaty and rich. They should be right up Santa’s Alley!

XXX Chocolate Chip Cookies

Yield: 8 cookies

XXX Chocolate Chip Cookies

Ingredients

1 cup chopped pecans

1 cup chopped walnuts

1/2 cup unsalted butter, softened

1 cup semi sweet chocolate chips

1 cup unsweetened chocolate chips

1/2 cup AP flour

1/4 tsp baking powder

1/4 tsp salt

3 eggs, at room temperature

1 cup granulated sugar

1 tbs vanilla

1 1/2 cups milk chocolate chips

1 1/2 cups mini marshmallows ( I used hot cocoa marshmallows)

Instructions

  1. Preheat the oven to 350 F. Taste the nuts on a baking tray for 8 minutes until they smell fragrant. Set aside to cool. Line baking trays with parchment paper.
  2. Melt the butter and bitter and unsweetened chocolate in a heat proof bowl over simmering water. Remove from the heat and set aside.
  3. In a medium bowl whisk together the flour, baking powder and salt.
  4. In the bowl of an electric mixer beat together the eggs and sugar until fluffy. Add in the cooled chocolate and beat until nice and glossy. Add in the flour mixture and stir until just incorporated.
  5. Fold in the nuts, chocolate chips and marshmallows. Let the dough rest for 20 minutes (it is a little runny but will firm upon standing).
  6. Scoop large dough balls (about 4 oz) onto the prepared baking sheets leaving 2 inches apart. Bake for 15-20 minutes until the tops crack. Cool completely before moving to a wire rack.
