Soft Bake Pumpkin Cookies

I was so excited to make the first cake in my new oven. I went ambitious and wanted to try my first surprise inside cake. I don’t do well with fiddly cakes and this was no exception. My cake came out delicious but completely smudged in the center.

The cake will have to make it’s debut in a few weeks. Until then these pumpkin cookies came in to the save the day! I’m so excited to live in a house in a big neighborhood now. I bought a giant pumpkin to put out on our front porch and I’m getting started on a new autumn wreath for the front door.

I think I’ll need to get more candy this year for the trick or treaters. Last year I had one little boy and three bags of candy.

We haven’t had much time to enjoy Nashville yet since we’ve spent the last few weekends doing odds and ends at the house. I work downtown and there are lots of fun eateries in the vicinity that I’ve been able to sample in the last few weeks. Dunn Brothers Coffee, Peace, Love & Little Donuts, and The Grilled Cheeserie Truck.

I can’t believe that it’s nearly October! I’ve only had time to make two pumpkin recipes. This recipe is from The Kitchen Paper. I didn’t make any changes. I hesitated to call these Snickerdoodles as they’re thicker and more of a soft bake cookie. The cookies are completely packed with pumpkin and cinnamon flavor! There’s also a whole cup of delicious browned butter thrown in for a good measure.
