I feel like that blob of ice cream in the photo right now. It was about 85 degrees in London this weekend and I dragged Alex to Cambridge for the afternoon on Saturday. It may have been scorching hot but it was worth it! We had a really nice afternoon. I couldn’t believe that I’ve lived here for more than 10 years and not been before.
We went punting, and when I mean punting, we paid a very nice Cambridge philosophy student to do all the hard work while we enjoyed the sights! I’d also recommend the Cambridge University Botanical Gardens. They were really beautiful and a nice smaller size compared to Kew Gardens.
It was way too hot to do any serious baking this weekend. I made this last weekend. It’s a hot, gooey version of the Salted Caramel Chocolate Chip Cookies. I like to call it a Gooey Cookie Pie. I made this in a six inch cake tin but if you have a mini skillet go ahead and use that.
Make a batch of the cookie dough. Place 5 or 6 scoops of cookie dough into the greased cake tin and spread evenly. Bake for 10-12 minutes at 350 F/180 C. Serve immediately with a scoop of ice cream. I made 2 cookie pies and still had enough cookie dough leftover to make a dozen cookies.
