I was worried that we wouldn’t have enough desserts for Christmas. Don’t laugh! I worry about serious things like this. I’m glad I was worried enough because while I liked the mince pies I made I’m more of a chocolate dessert love than a fruit dessert lover.
As a result we ate way too much and it was so cold I felt like a bear hibernating for the winter.
Alex loved these cookies so much that I showed him to make them. He made one batch all by himself already, which is amazing because he only knows how to make beans on toast.
If you have strong arms you only need a bowl and spoon. He loves them because they’re incredibly rich and dense.
I can manage to eat about one in a single sitting. Alex can eat the whole tray!
1 cup creamy peanut butter
3/4 cup sugar
1 tsp baking soda
1/4 tsp salt
1 cup chocolate chips
- Preheat the oven to 350 F and line a baking tray with parchment paper.
- In a large bowl mix together the peanut butter, sugar, egg, baking soda and salt. Stir in the chocolate chips.
- Drop tablespoons of dough 2 inches apart onto the prepared tray and bake for 12-14 minutes.
- After 5 minutes place cookies on a cooling rack for 15 minutes.
