Cinnamon Pumpkin Oatmeal Cookies

It’s almost Thanksgiving! Hopefully as you read this I’m on my way to Knoxville for a few days at my parents house. I spent several nights and all weekend getting my desserts ready for the big day. Hopefully they survive the three hour drive from Nashville.

Cinnamon Pumpkin Oatmeal Cookies

I hope the desserts taste ok. I have a habit of picking recipes on a whim and not testing them out beforehand. See tilted hot chocolate cake from 2012! The surprise is what makes it fun :)

These cinnamon oatmeal cookies are the perfect pair with the new pumpkin chocolate chips. I forgot to buy regular oats at the store and made due with some quick cook ones. The cookies were a little soft because of them but they were still delicious.

They weren’t quite as good as the oatmeal cream pies I made but those were some of the tastiest cookies I EVER made. Alex still ate all of the cookies (and he doesn’t even like frosting).

I used the recipe from For the Love of Cooking and added in about one cup of the pumpkin chips.
