It was my job this year to bring dessert for Thanksgiving. I brought a pumpkin pie but I also brought these Christmas Funfetti Shortbread Cookies. It felt appropriate that as we finished Thanksgiving dinner that we started the Christmas season by eating cookies and decorating my sister’s Christmas tree.
I loved these cookies so much that I used them as a backdrop for our Christmas card. I really like how it turned out! All the photo ordering sites offer discounts around Christmas time so it ended up being around the same price as buying a box of cards. I think I’m going to do something fun like this every year.
These shortbread cookies are seriously easy to make and even easier to customize to you favorite colors or to match whichever holiday. I made two batches. One red and green themed for Christmas which I dipped in red candy melts and the other batch I made blue and white winter themed. I dipped those in white chocolate.
You’ll find the recipe over at one of my favorite blogs, The Cake Merchant. Besides making my cookies Christmas themed I didn’t make any changes to the recipe. For the method, I rolled my cookies out between two sheets of parchment and used round biscuit cutters.
I think next year instead of a Christmas card of cookies everyone will expect actual cookies in the mail!
