Chocolate Peanut Butter Ebelskivers

Ebelskivers are Danish pancakes. Peanut butter isn’t a traditional flavor but I got an Ebelskiver cookbook at William Sonoma (also the place to get an Ebelskiver pan) and it inspired me to make my own flavor combination. Ebelskivers are fun because so many flavors can be mixed and matched and they’re as easy to make as regular pancakes!

Chocolate Ebelskivers

1 cup plain flour
1 1/2 tsp sugar
1/2 tsp baking powder
1/2 tsp salt
2 eggs, separated
1 cup whole milk (I used soy)
4 tbs melted butter
1/2 tsp vanilla
200g semi-sweet or dark chocolate melted
1. Preheat oven to 200 F/90 C and in a microwave safe bowl or double boiler melt the 200g of chocolate and set aside to cool.

2. In a large bowl whisk together the flour, sugar, baking powder and salt.

3. In a small bowl, lightly whisk the egg yolks, then whisk in the milk, 2 tablespoons melted butter and vanilla extract. Add the melted chocolate to the egg yolk mixture.

4. Add the melted chocolate and yolk mixture to the flour mixture and using a wooden spoon stir until well blended. The batter will be lumpy.
5. In a clean bowl, using an electric mixer on high speed, beat the egg whites until stiff, but not dry, peaks form. Using a spatula, fold about one-third of the egg whites into the batter to lighten it, fold in the rest until no white streaks remain. Use the batter right away.

6. Using the 2 tablespoons of leftover melted brush each well of the ebelskiver pan and turn stove to medium-low heat (about 3 for electric hobs). When hot spoon about 1 tablespoon of batter in each well.

7. Quickly scoop of 1 teaspoon of peanut butter into each well.

8. After scooping in the peanut butter quickly scoop another tablespoon of batter on top.

9. After about 4 minutes, using 2 wooden skewers flip the ebelskiever over. The middle will still be liquid but once flipped it will fuse together.

Let cook for a further 4 minutes. Remove from pan and place in the preheated oven to keep warm until serving. Repeat process until all batter is used.

Dust with powdered sugar to serve.
