Bacon S’mores
On one of our trips to Florida several years ago the hotel we were staying at had a bonfire pit especially for roasting s’mores. Even though it was 90 degrees outside we spent the night by the fire so I teach Alex about the delights of the s’more. We ended up eaten alive by mosquitoes but the s’mores were worth it.

I was trying to think of a few lower calorie desserts that Alex could have while he’s on a temporary diet. I thought a fruit parfait would be a fun dessert. It’s fun, easy and most of all tastes very good. There is still some sugar in here so I made him a tiny cup to have after dinner and he was very pleased.

I had a hard time deciding if this post should be called a Sweet Omelet or a Sweet Breakfast Burrito! In the end I went with breakfast burrito because instead of a savory tortilla the outside is a sweet crepe and the inside is stuffed with scrambled eggs and tart berries. On the other hand I could have gone with omelet since the single serving crepe recipe contains mostly egg. Either way I love the sweet and savory combination going on here.

I love coffee, I’m pretty addicted to caffeine, but hey, we all have our vices. I’m pretty strict and limit myself to one or two cups of coffee in the morning and then I switch to tea for the rest of the day. I could easily drink a lot more!

These are the daintiest marshmallows that I’ve made so far. Marshmallows made with egg whites are more delicate than the ones I’ve made with corn syrup. Once the marshmallows set they develop a very thin outer layer that’s almost crisp.
