I made this cake for a belated 4th of July BBQ last month. Instead of a red, white & blue cake I brought something that was a uniquely American cake, red velvet!
When deciding which cake to bring to the party I couldn’t decide between a cake and a cheesecake so I made a Cheesecake Factory inspired cheesecake cake. This was absolutely the right decision.
I used this recipe and baked 2 cakes. One medium sized cake (to bring to the BBQ) using my Victoria sandwich tin and one mini cake (for me!). I saved some of the batter and baked a few mini cupcakes to place on top of the bigger cake. I really love this decoration.
Baking the cheesecake layer in a water bath is a little bit of a hassle but the end result is soft and creamy so make sure to follow all of the steps.
