Since I didn’t get much of a chance to make many Christmas treats I decided to get a head start on Valentine’s Day. Target has a pretty good selection of red and pink goodies. I got these napkins, straws and plates for $1-$3 each.

I love cherry chip cake. Brings back nostalgic memories. My mom used to buy the boxed kind all the time when I was a kid. I could eat the maraschino cherries straight from the jar. The marshmallow frosting is a good compliment to the cake. Keeps it light if you’re having a romantic evening 😉

Mini Cherry Chip Layer Cake

I halved the recipe from Taste and Tell and used 2 six inch pans to make it mini! Perfect for two. The cake was a little soft so I wrapped the layers and froze them for 1 hour before layering and frosting. I used almond extract instead of cherry. I wasn’t super crazy about the frosting recipe. I love marshmallow frosting but I prefer the Martha Stewart 7 minute frosting I just made for the Funfetti Cupcakes. It had a better marshmallow consistency and spread easier.
