I’m a total control freak when it comes to Christmas. The Christmas food menu is always meticulously planned out in advance, in Microsoft excel, of course. Never mind that I posted all my Christmas card’s after the official posting dates and managed to only buy about one Christmas present.
I, of course, planned about five different Christmas desserts, which between two people is ridiculous! I didn’t make all of them so there wouldn’t be any wasted food. I chose this recipe to make first because it makes two loaves. I kept one for us and brought the prettiest looking one down to the concierge desk in our apartment building. For the few that had to work on Christmas day.
I made one in a loaf tin and one in my mini bundt tin. The cake is super moist and zesty from the orange juice. The streusel is my favorite part. Recipe can be found at Joy The Baker. The only changes I made were I stirred the cranberries into the batter whole and made the icing sugar glazed mixed with orange juice for extra zing.
