I like cake so it’s not really fair at all that birthdays only come once a year. Not because I wish I was older, but because I love birthday cake! I pretty much have cake or dessert in my life nearly every day of the week, but birthday cake for some reason just tastes better than regular cake. Why is that?
These brownie push pops are meant for a birthday’s but I made them to celebrate just a normal everyday Saturday! They are tasty, fun, happy and everything a birthday or Saturday should be. Layer the brownies with the whipped cream or ice cream however you wish. As you can see from some of the pictures it’s a little bit of a messy business and even harder to get the pops to stand upright!
Birthday Brownie Sundae Push Pops
adapted from Push Up Pops (makes 17 push pops)
8 ounces unsweetened chocolate
1 cup butter
5 eggs, room temperature
3 cups sugar
1 tbs vanilla
1 tsp almond
1 1/2 cups plain flour
6 ounces chocolate chips
whipped cream or vanilla ice cream
sprinkles, for decorating
- Preheat the oven to 375 F/190 C. Melt the chocolate and butter in a saucepan. Cool slightly.
- In a large bowl beat the eggs, sugar, vanilla and almond extract. Add in the melted butter mixture and beat until combined.
- Add in the flour until just blended. Stir in the chocolate chips. Pour into a greased jelly roll pan and bake for 20 to 25 minutes. Cool.
- Using the end of a push pop to cut circles out of the brownies. Layer with 2 brownie rounds topped with vanilla ice cream or alternate between brownies and whipped cream.
