Brown Sugar Banana Bread
Posted by Cupcake Kelly on Nov 30, 2011 in Cake | 5 commentsI had some over ripe bananas in the house so I obviously made banana bread! Pretty simple.
I think I like this all brown sugar banana bread better than any banana bread I’ve made in the past.
I wish I had more mushy bananas! We ate the whole loaf in two days.
Brown Sugar Banana Bread
Ingredients
1/2 cup butter, at room temperature
1 cup brown sugar
2 eggs
1 tbs vanilla
4 ripe bananas, mashed
2 cups plain flour
3 tsp baking powder
1/2 tsp salt
1/2 cup chocolate chips
Instructions
- Preheat oven to 350 F/180 C. Grease a loaf tin.
- In a large bowl cream the butter and sugar together until light and creamy.
- Add the eggs one at a time, beating after each addition. Stir in the vanilla and the mashed banana.
- In a small bowl whisk together the flour, salt and baking powder. Slowly stir the flour mixture into the banana mixture. Stir in the chocolate chips. Pour the batter into the prepared loaf tin and bake for 60 minutes. Place on a cooling rack. Cool before slicing.

I love banana bread and usually buy bananas to ripen at home so I can bake with them!
I had overripe bananas and some extra time, so I made this tonight. Delicious! Love the texture and deep flavor the brown sugar gives, and it tastes so banana-y! Love it!
