Key Lime Pie Rice Krispie Treats

These Rice Krispie Treats are so much fun! I made them awhile ago using my leftover Kool Aid Pop Rocks Marshmallows but they seem more suited to spring and summer. I sprinkled the top with crushed meringues to make them look like little key lime pies.

The Kool Aid really gives the squares a strong lime flavor. I didn’t add any extra food color but some green could be added to make them look more like pie.

Key Lime Pie Rice Krispie Treats

If you don’t want to make your own marshmallows stir in a packet of lime kool aid after melting some regular marshmallows. The end result should taste the same.

Key Lime Pie Rice Krispie Treats

Ingredients

3 tbs unsalted butter

3 cups Lime Marshmallows

6 cups Rice Krispies

Crushed meringues (I bought a package at the store and crumbled up a big handful)

Instructions

  1. Lightly grease a pan with cooking spray. In a large pot melt the butter. Toss in the marshmallows and stir until melted. Add the Rice Krispies and stir until coated.
  2. Pour into pan. Press the crushed meringues on top. Cover in cling film until set and cut into squares.
