Heart Attack Brownies

These brownies are crazy insane good. I made them for my birthday instead of cupcakes. Gasp! I brought them into the office and the English natives were blown away. I think for the non foodies in the office the concept of a three layer brownie was something new.

The brownies consist of a cookie dough layer, an Oreo layer and a chocolate brownie layer. I wish I’d made two batches. Everyone was ready to break their New Year’s diets.

Brownie Layer
10 tbs (140g)  unsalted butter
1 1/4 cups sugar
3/4 cup cocoa powder
1/2 tsp salt
2 tsp vanilla
2 eggs
1/2 cup plain flour

Oreo Layer
1 pack (2 English rolls) Oreos

Cookie Dough Layer
1/2 cup unsalted butter (115g)
1/4 cup brown sugar
3/4 cup sugar
1 egg
1 tsp vanilla
1 1/4 cup plain flour
1/2 tsp salt
1/2 tsp baking soda
1/2 tsp baking powder
1 cup chocolate chips

1. Line a 9 x9 inch pan with parchment paper and preheat the oven to 350 F/180 C. Make the brownie layer. In a saucepan melt the butter of medium heat. Whisk in the sugar and cocoa powder once melted. Add the salt, vanilla, eggs and whisk until combined. Add the flour and mix. Set aside.

2. Make the cookie dough layer. In a large bowl cream the butter and sugar together on medium speed. Add the eggs and vanilla and mix until combined. Add the flour, salt, baking soda and baking powder and mix until just incorporated. Fold in the chocolate chips by hand.

3. Start the assembly. Press all of the cookie dough into the bottom of the pan. Layer as many Oreos that will fit on top. Pour the brownie mixture over top evenly.

4. Bake for 30-35 minutes until a toothpick inserted in the center comes out clean.

    I am making these right now for my brothers birthday … It’s perfect since he loves Oreos’. I just wanted to note a couple of things … I think the oven temp should be 350F … I just had to crank mine up since they weren’t done after 35 minutes. Also, I assumed it was 2 eggs in the brownies? I guessed since that’s what the original recipe used. Thanks for posting this, I can’t wait for my brother to try them!

    OMG, I made these a well last week! Except I cheated and used a box of brownie mix cuz I just didn’t have the time with the threat of baby waking up looming over my head. They are amazing! You’re coworkers must love you!

    Hey!
    I’ve done these twice now and the first time I baked them for 30 minutes and they burned slightly from the top. The second time i cut the time to 20 minutes, so the brownie stays slightly undercooked and they were perfect. But it’s probably my weird oven.
