Double Chocolate Brownies

These don’t look like the fudgiest brownies ever but that’s cause I left them in the oven too long and they resemble chocolate cake. Since I overcooked these babies by accident I made them into something really special! All will be revealed in tomorrow’s post.

They have a great taste despite being left in too long. Bake them for a little less and they are guaranteed to be rich and fudgey.

adapted from Loveless Cafe (makes about 10 brownies)

Ingredients
1 stick (112g) + 2 tbs unsalted butter
2.5 ounces/71g 70% chocolate, chopped
3 eggs
1 1/4 cups sugar
1 tsp espresso powder
1 tso vanilla
1/4 cup + 2 tbs plain flour
1/2 tsp baking powder
1/2 cup chocolate chips

1. Preheat the oven to 350 F. Grease and line an 8 x8 inch pan with baking paper. In a microwave safe bowl melt the butter and chocolate on defrost. Set aside.

2. In another bowl whisk together the eggs, sugar, espresso powder and vanilla. Whisk in the melted chocolate.

3. Sift the flour, cocoa powder and baking powder over the batter and half of the chocolate chips. Fold together and pour into the prepared pan. Sprinkle the remaining chocolate chips on top and bake for 25-30 minutes. (I thought 30 minutes was over baked).
