I’m really glad I had the foresight to start using up all my baking stash over the last two months. I’ve been running around like a mad woman the last few weeks arranging our move and doing some last minute sightseeing. I’m completely exhausted now. Last weekend I also thought I might be coming down with a cold. As a result I spent the whole weekend in bed which wasn’t much fun but I feel better now.
It was a total bummer to be stuck at home in bed. I had planned to go to Bournemouth with Alex for one last visit with the in laws (and one last trip to Monkey World) but I half watched about 50 episodes of ‘It’s Always Sunny in Philadelphia’ on Netflix instead. It wasn’t much fun but I’m glad I took it east because I really don’t want to be sick in a few weeks when we have to get on a plane. That is the worst feeling.
Back to the brownies. I chose this Dark Chocolate Peanut Butter Brownie recipe from Gluten Free Canteen mainly because I could use the whole bag of peanut butter chips. I used regular all purpose flour and butter instead of shortening. I used Hershey Special Dark Cocoa for an extra rich brownie layer. Make sure to watch the timer on these. There’s nothing worse than dry brownies!
Keep a glass of milk at the ready for these too. They are certainly super rich!
