Mexican Three King’s Bread or Rosca de Reyes is made to celebrate the Epiphany. A baby Jesus is usually hidden the cake to symbolize fleeing from King Harold’s plan to kill all babies that could be the messiah. Whoever finds the baby is blessed! Not to be confused with the yellow, green and purple King Cake in North American to celebrate Fat Tuesday.
I made this recipe from King Arthur Flour and filled my bread with pecans, dried apricots and glace cherries. I wish I’d filled my bread with a little more than the recipe called for. It wasn’t stuffed enough for our liking! I’d recommend eating the bread as soon as possible as it goes stale pretty quick.
