I haven’t had much time for baking the last few weeks. We had company one weekend and I’ve also been very busy at work. For a few weekends I needed some downtime to just relax and watch a couple mindless hours of TV.
Still wanting to enjoy something homemade I utilized my Vitamix which whizzes anything up in about under 30 seconds.
I make a smoothie at least every other day but I always default to my favorite add ins. Frozen berries, bananas, OJ and carrots. To mix things up a little I grabbed a big grapefruit that was on sale at the store.
What I like about the grapefruit smoothie is it almost tastes like lemonade but we’re not adding any extra sugar. I like mine more on the tart side so you may need to add more OJ to make it sweeter for your own tastes.
1 cup strawberries
splash of OJ for sweetness
- Peel and segment the grapefruit (get any excess juice in the blender). Removing as much of the white pith as possible.
- Place all the ingredients in a blender and pulse until smooth and combined.
