I’m almost glad to be at work today, almost. It’s certainly nice to be in the air conditioning for most of the day. It’s supposed to reach in the 90′s this week. That’s pretty unheard of in London. I think I can remember only one other summer it was that hot and I’ve lived here for more than 10 years!
This is the first recipe I made from Crussh. I love peaches but the peaches we get here are pretty terrible. I like the idea of a roasted peach smoothie so I went ahead and bought some peaches anyway. I managed to find two peaches in the punnet that were ripe enough to roast.
I’m seriously considering buying a better blender in a few months time too. I’m thinking about saving up and buying a Vitamix. Our current blender is so lame it can hardly crush an ice cube.
2 peaches, halved and pitted
1/4 cup fresh pineapple juice
7 ice cubes
- Grill the peaches in the oven under a hot grill for 5 minutes until caramelized. Stick into the freezer for 10 minutes to cool them down.
- Pour all of the ingredients into a blender and pulse until smooth. Serve immediately.
I also put in about 1/4 cup of Greek yogurt as an extra ingredient.
