Meyer Lemon & Rosemary Lemonade

I’m so excited that I finally found some Meyer Lemons! When I lived in London I once went on a wild goose chase for them all over the city on a false tip. You can’t get them outside of the US because they’re too delicate to ship.

I bought them without any plan on what I would actually do with them. Since they’re sweeter and have a more floral taste than regular lemons I wanted to make something to highlight the delicate flavors. I thought a lemonade would be the perfect way.
I infused the rosemary only for a few minutes while the sugar was dissolving. If I left it overnight I felt it would overpower the lemons.
Since I used fancy lemons I put the lemonade in a fancy pitcher I got from Ikea.
Ingredients
5 cups water
1 cup sugar
1/2 cup Meyer lemon juice (I used 3 juicy lemons)
3 sprigs of fresh rosemary
Instructions
- In a saucepan over medium heat pour in 1 cup of water, the sugar and the rosemary until it just begins to simmer. Add in the rest of the water and the lemon juice. Bring to a simmer again and remove from the heat.
- Set aside to cool and pour into a pitcher.

It looks so delicious! And Lemonade is always great on hot summer days 😉 And true, I have also never saw any Meyer Lemons here in Europe… a shame. I would so love to try them!
