I was so excited when I woke up on Saturday morning. The sun was shining and when my feet hit the floor they didn’t feel like ice cubes. It was a long hard winter for us. We weren’t used to sub zero temperatures and it was a tough few months.
I immediately wanted to make lemonade but I didn’t bring my old pitcher with me from London. It never fit in our small fridge back there and I had lost the lid.
I hopped in the Mini, opened the sun roof and whizzed down to Bed, Bath and Beyond and got a snazzy one with an infuser. I was also totally stoked when I realized that when I use my key it remembers that I was listening to the radio and which station the last time I drove. It took me six months to figure that out but I don’t do a whole lot of driving!
This lemonade is so refreshing. Making it homemade is worth it. I thought it was a little too sweet for my tastes so I would add a little less sugar next time but it depends on how sweet your strawberries are.
1 cup sugar
1 cup water
1 1/4 cups lemon juice (about 6 lemons)
1 pint/10 ounces strawberries, stems removed and sliced
24 oz cold water
- In a medium saucepan combine the water and sugar over medium heat until the sugar is dissolved. Remove from the heat. Stir in the lemon juice.
- Place the strawberries in a blender and pulse until they are liquid.Strain the strawberries to remove the seeds and stir in with the lemon juice.
- Pour into a jug and top up with the cold water. Stir and refrigerate until chilled.
