Chocolate Coconut Tea Blend

Alex isn’t even allowed to talk to me until I have my mug of tea in one hand and bowl of Rice Krispies in the other hand. I also get a bit grumpy when Eamon has the day off on Sky News and I have to watch Mark Longhurst. I like Stephen Dixon though. He’s nice to look at first thing in the morning.
Enough about news readers. I drink so much tea that I try to mix it up and come up with some creative blends. Drinking plain black tea all the time just doesn’t do it for me.
I also like my tea nice and strong. I used a strong Assam tea this time as it goes beautifully with milk. I added some toasted coconut and cocoa nibs (which can be bought online or at Waitrose). The chocolate flavor of the nibs is a fantastic compliment to the Assam tea.
Ingredients
4 ounces Assam loose leaf tea
2 tbs cocoa nibs
2 tbs toasted coconut
1 tsp vanilla
1/2 tsp coconut extract (optional)
Instructions
- In a small bowl mix together all of the ingredients and stir well with a wooden spoon. Pour into a tea canister. Shake well. Store in a cool dry place (like the back of a cupboard) for 24 hours before using.

makes enough for 50 cups of tea
