Chocolate Chip Cookie Coffee Syrup

I don’t know how these ideas get into my head. I’m munching away on these chocolate chip cookies and I think – wow, I wish my coffee could taste like cookies too. Not just mushy cookies that sunk to the bottom of your cup from dunking cookies in it.

I also think I’m obsessed with sneaking dessert into every meal. Remember I hosted course after course of dessert goodies disguised as Brunch?

Chocolate Chip Cookie Coffee Syrup

A google search told me that a homemade version did not exist. I started with a simple sugar syrup and added what gives a chocolate chip cookie it’s essence. Viola! A few teaspoons to your morning cup of tea or coffee and you have a lovely aroma of cookies in your cup!

The syrup will be fairly dark due to the cocoa powder. I’m off to make a cookie latte now…

An American Cupcake in London Original

Ingredients
1 cup water
1/2 cup sugar
1/2 cup brown sugar
1/4 tsp salt
1 tbs vanilla
1 tbs cocoa powder (I put 1 tbs in but I was thinking maybe 1/2 tbs would work well too)

1. Pour the water, sugar and salt into a saucepan and bring to a boil. Simmer for a 2 minutes. Remove from the heat and stir in the vanilla and cocoa powder.

2. Pour the syrup into a sterilized jar. Keep refrigerated for no more than one month.
